What is better during Fall or Winter than staying in and baking? I have loved baking since I was probably in middle school. I love finding new recipes on Pinterest, or just pinning recipes and pretending I will have time to make them all. The recent Fall weather inspired me to find a new cookie recipe. The one I chose is from the blog Sally’s Baking Addiction. She is probably my favorite dessert blogger, and I always trust her recipes. These cookies taste and smell exactly like Fall. Another nice thing about this recipe is that it doesn’t require an electric mixer.
Chewy Brown Sugar Cookies
Ingredients:
- 2 cups (250g) all-purpose flour (spoon & leveled)
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon (use 1 teaspoon if you love cinnamon)
- 1/4 teaspoon salt
- 3/4 cup (170g) unsalted butter, melted
- 1 and 1/4 cups (250g) packed dark brown sugar (or light brown)
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 1/3 cup (67g) granulated sugar, for rolling
Here are the dry ingredients. I used a whole teaspoon of cinnamon, because I love it 🙂 .
Melted butter and brown sugar, I let the butter cool slightly before mixing.
Vanilla added.
Wet and dry ingredients mixed together.
Roll your dough.

My cookies ended up a little flatter than hers look, but I think it is because I made mine a slightly smaller. They also flatten a little once cooled.
